Potato Stew


Ingredients:

Potatoes - 3 – 4 Big sized
Shredded Green Peas - 1 medium cup
Ginger - 1 inch
Green Chillies - 2 (slit vertically)
Coconut milk - 250 ml.
Coconut oil - 1 table spoon
Salt to taste.


Method:
  • Peel the potatoes and cut them into small pieces.
  • Cut the ginger too in to very small bits.
  • Cook the potatoes in a closed vessel till they become soft.
  • In a frying pan add coconut oil and fry the ginger and then add the potatoes and green chillies.
  • Saute for 5 minutes and then add the coconut milk(as a variant plain milk can also be used).
  • Mix well and cover the pan with a lid. Let it simmer for five minutes.
  • Finally add salt and remove from fire. Add a tablespoon of coconut oil. Serve hot.
Variant: For mixed vegetable stew all vegetables(beans, carrots, peas, cauliflower, capsicum) can be used.
