Ingredients:
Potatoes - 3 – 4 Big sized
Shredded Green Peas - 1 medium cup
Ginger - 1 inch
Green Chillies - 2 (slit vertically)
Coconut milk - 250 ml.
Coconut oil - 1 table spoon
Salt to taste.
Method:
- Peel the potatoes and cut them into small pieces.
- Cut the ginger too in to very small bits.
- Cook the potatoes in a closed vessel till they become soft.
- In a frying pan add coconut oil and fry the ginger and then add the potatoes and green chillies.
- Saute for 5 minutes and then add the coconut milk(as a variant plain milk can also be used).
- Mix well and cover the pan with a lid. Let it simmer for five minutes.
- Finally add salt and remove from fire. Add a tablespoon of coconut oil. Serve hot.
