Bagara Baigan

Ingredients:

Brinjals (small) - 200gms
Salt to taste
Garam masala powder
Dania powder
Tamarind -lemon size
Turmeric powder - a pinch
Coriander leaves

for masala:

Peanuts - 1 cup
Til seeds - 1 cup
Dry coconut -1 cup
Green Chillies -4
Onions -2
Ginger - 1/2 tsp
Garlic - 3 flakes

Fry all the above with little oil in the kadai. Then grind into little coarse paste.

Method:
  • Slit brinjals in four keeping the stem intact.
  • Deep fry the brinjals in oil till they are half cooked.
  • In another pan, heat oil and add the paste.
  • Add salt, turmeric powder, garam masala powder, dania powder and tamarind paste.
  • Then add the cooked brinjals into this.
  • Cook covered on slow heat till tender.
  • Garnish with coriander leaves.
  • Serve hot with rotis, rice..
