Mixed Veg Curry


Ingredients:
Vegetable (carrots, beans, capsicum, peas)
Onions -2
Tomatoes - 2
salt to taste
lemon juice - 1 tblsp
coriander leaves

for masala:

Onions-2
tomatoes-2
cashewnuts- 1tbl sp
garlic -2flakes
ginger-small bit

(grind all the above with little water)

Procedure:
  • Cook vegetables.
  • Cut onions, tomatoes. In a kadai, heat oil. Add onions fry till golden brown.
  • Then add tomatoes, pinch of turmeric powder.
  • Add the grounded masala paste.
  • Add the cooked vegetables and salt and mix well.
  • Remove from fire and then add lemon juice, coriander leaves.
  • Serve hot with roti.
