Brinjal Rice (Vaangi Baath)


Ingredients:

Rice- 1cup
Brinjals -250gms

for masala:
coriander seeds - 2tbl sp
chana dhal - 1tbl sp
urad dhal - 1 tbl sp
red chillies - 3
cinnamon-1
cloves-2
coconut - 1 tblsp
salt to taste

(Fry the above without oil, except coconut. Then grind into coarse powder)

for seasoning:
mustard seeds-1/2sp
chana dhal-1/2 sp
urad dhal-1/2sp
red chillies -2

Procedure:
  • Cook rice and spread on a plate.
  • Cut the brinjals.
  • In a kadai, heat little oil. Add mustard seeds, chana dhal, urad dhal, red chillies.
  • When they pop up, add brinjals and cook to soft.
  • Add salt, masala powder, pinch of turmeric.
  • Add curry leaves and coriander leaves.
  • Mix with rice and serve hot.
