Ingredients:
2 cups Basmati rice
4 tsp Peanuts
2 tsp Cumin seeds
1 inch Cinnamon stick
2 tsp Garam Masala
5 Cloves
3 Green Chillies
2 Bay leaves
2 tsp Red Chilli powder
1/2 tsp Turmeric powder
1 Onion sliced
1 Potato cubed
1cup Cauliflower, carrot, beans (cooked)
1 cup Green Peas
Oil 3 tsp
5 to 6 Curry Leaves
1 tsp Mustard Seeds
1 tsp Cumin Seeds
Pinch of hing
2 tsp Ginger paste
Method
Wash and soak rice in water for 30 minutes.
Pressure cook and keep aside.
Dry roast coriander seeds, cumin seeds, cinnamon stick, cloves till it changes its color. Allow them to cool down then grind coarsely.
Heat oil in a pan, add bay leaf, mustard seeds, peanuts, cumin seeds, pinch of hing, curry leaves, add sliced onion and saute till onions are golden color.
Add turmeric powder, ginger paste and cook for a minute.
Now add all masala powder, garam masala, red chilli powder, mix and cook for 2 mts.
Add all vegs (cooked) and mix, add salt, add some water, cover and cook for 5 mts.
Add rice, mix well
Garnish with coriander leaves and freshly grated coconut.
