Brinjal methi sabzi

Ingredients:

250g - brinjal
250g - fenugreek leaves
1 - onion
1 - tomato
1 tsp - ginger garlic paste
1 tsp - red chillipowder
1 tsp - coriander powder
1/4 tsp - turmeric powder
Salt as per taste
Oil for cooking

Method:
  • Heat oil in a pan.
  • Add chopped onion and fry.
  • When the onion turns brown, add chopped tomatoes, salt and spices.
  • When the mixture bubbles, add chopped brinjal, stir well and cover till brinjal is cooked.
  • When the brinjals are done, add the fenugreek leaves.
  • Mix well and cook for 5 min.
  • Enjoy with chappati.
