Ingredients:
Carrots - 4 - 5 Medium Sized
Milk - 1 Litre
Sugar - 150 Gms
Saffron - A small pinch
Method:
- Peel and slice the carrots into very thin pieces and cook them well.
- Mash them in a mixie. Boil the milk so that it condenses to 3/4th of its original volume.
- Add the mashed carrots and let it simmer till the raw carrot smell is totally gone.
- Add sugar and a very small pinch of saffron and after a few minutes remove it from flame.
- You can also use roasted cashews, chopped pistachio or shredded almonds for dressing.
